Celiac disease is a genetic autoimmune disorder that causes the intestines to flare up when gluten, a protein found in wheat products, enters the body. This disease can present itself at any time after you introduce gluten products into your diet.
Our Story
My name is Gracie Fitzgerald and I am a sophomore at Meridian World School. When I was five, my mom was diagnosed with celiac disease after being sick for months. After that, we basically had to relearn everything we'd known about baking; gluten free products were more complex to work with. I have always hated watching my mom not be able to enjoy certain products just because of gluten, so, my goal is to inform others about this issue and promote my recipes.
